Slow Fermentation, True Flavor
Our sourdough is fermented slowly over many hours. This natural process allows the dough to mature, creating complex flavor, an open crumb, and better digestibility. We do not use commercial yeast - only a living rye starter and careful technique.
Slow fermentation is not a trend for us. It is the foundation of everything we bake.
